Which breed of snake is shaped and thrive in this environment? We would also be able to handle the snake time to time.

All Snake Snake, but a ring / ring neck snake (which are actually quite interesting) will eat your anoles. I'm from Florida, where we have tons and tons of lizards snakes. Ring Snakes are the only thing that you do not eat lizards - they are bug eaters. I used to catch snakes ring as a kid and play with them - very easy to handle, and most importantly they get is about a foot long. No more than a half inch in diameter. They are inhabitants of soil, and enjoy dark hiding places.
Arborial Anything (shaft / housing above ground) is made to eat things like lizards and birds.
